Breakfast Cupcakes

If you will recall from an earlier post, I made some breakfast cupcakes. Well, I tried them a different way this morning.

I still used the foil paper, but I sprayed them first...better results but still not what I want. Also, I used sausage instead of bacon and mixed it IN to the biscuit batter...we really liked that change.

Also, instead of just pouring a scoop of egg on top, I made a little well in the middle of the biscuit and poured the egg in there then I covered the top in cheese.

We really liked this difference. The middle was a little soft and gooey from the egg, which we liked and who doesn't like MORE cheese?
