Breakfast Egg and Biscuit Cupcakes!

So last night...at least I think it was last night...yeah it was last night. Anyways...last night I couldn't sleep. I got up out of the bed and addressed some invitations with my wonderful fiance...but I wanted to bake.

So, I decided I was going to try some sort of breakfast cupcake...here's how it went down!

I used 2 packages of the pre-made biscuit mix from Kroger (the Kroger brand) and added a little more than 1 cup of water and then 2 cups of shredded cheese. I <3 cheese!





Then I put a spoonful in each of the cupcake cups. I used the foil cups...and I regret that. I didn't spray them and it takes quite a bit of effort to get the wrappers off! UGH!



Then I took some eggs (I think I ended up with about 8 total) and scrambled them with my fork. I put them aside and started frying up some bacon. All I had was turkey bacon...which is good...just not real bacon. However, 3 pieces of turkey bacon is equal to 1 piece of bacon...I think that's a pretty fair trade off.



Then after the bacon was cooked (doesn't it look funny?) I stuffed it into my NINJA Food Processor and Blender and chopped it to smithereens!




Then I added the turkey bacon bits to the eggs and mixed them up good. After that, I took an ice cream scooped and scooped some of the mixture on top of the cheese-biscuit mixture. It was enough to cover it, but you can do as much as you like.





And THIS is what came out!





YUM! Give me some butter and grape jelly and I'm good to go! Syrup would be good on top of these as well or just eat them plain on the go! If I had to change one thing about them, I'd use paper wrappers...other than that, I loved them!

  1. This is perfect for heat and go eats! imma have to try this out next time we have an early-rise vacation. no utensils, no plates, no mess!
